One More Noodles Manchester Review: A Chinatown Noodle House That Quietly Sets a New Standard On George Street
One More Noodles in Manchester is a noodle house in Chinatown that’s hand pulling and hand making their own noodles in house! One More Noodles have sourced their own ingredients, created a recipe to create a consistency, and they’re an independent venue – which we LOVE supporting on this blog!
Manchester’s food scene is built on layers. Chain brands, long-standing institutions sit beside experimental pop-ups, while global flavours are reinterpreted through local, independent ownership such as One More Noodles! Ensuring you’re getting flavour, quality, all at a great price! Every so often, a new opening arrives that does not shout for attention, but earns it through depth, care, and consistency. One More Noodles is one of those places! So it’s definitely on my list of places to eat in Manchester!
Located on George Street in Manchester’s Chinatown, One More Noodles is a relatively new restaurant, having welcomed diners for just two months at the time of my visit. However, the concept itself has been quietly developing for over 18 months! That time shows. This is not a rushed menu, nor a trend-led restaurant chasing virality. It is a focused, intentional noodle house built around flavour, craftsmanship, and respect for the dish. Which shows here at One More Noodles!
I was invited to sample the menu, and the experience genuinely exceeded expectations. Regular readers will know that ramen, pho, and broth-based dishes rarely feature on this website as my personal reviews unless I’m doing them for information, rather than eating. Historically, I have never fully connected with the broth itself in many of these dishes. At One More Noodles, that completely changed. From the first spoonful, it was clear this was something different!
I had the pleasure of meeting Chao who owns One More Noodles and you’ll often find him working as he’s a self start up business! Whilst I was there, I was able to find out more information on how One More Noodles was founded. So, lets find out what makes One More Noodles different to the other noodles in Manchester.
First Impressions: Understated, Calm, and Confident
Walking into One More Noodles, the first thing that stands out is restraint. The space is clean, uncluttered, and thoughtfully designed without leaning into gimmicks or over-styling. There is a quiet confidence to the room that immediately sets the tone.
This is not a restaurant trying to impress through excess. Instead, it feels intentional and grounded, allowing the food to remain the focal point. The atmosphere is relaxed and welcoming, suitable for solo diners, casual lunches, or low-key dinners with friends.

The Founder Story: Built Slowly, Built Properly
One More Noodles is run by Chao, and understanding his journey adds an important layer to the experience. The business was self-funded through saving, with no shortcuts taken. Chao developed his own recipes, designed the branding himself, and continues to run much of the operation.
Before opening a physical space, the concept began whilst Chao was in university. He opened as a ghost kitchen first, until venturing into his own space in Chinatown Manchester! During his time of saving for his own space this allowed him time to refine broths, test noodle textures, and perfect balance before the pressure of a full restaurant launch. He sources his ingredients from China and the UK. After more than 18 months of development, One More Noodles transitioned into its own venue in Manchester’s famous Chinatown.
In a city where many new openings are expansion-led or investor-backed, this level of personal involvement matters. It shows in the consistency, the clarity of the menu, and the confidence in keeping things simple, fresh, and handmade.
Handmade Noodles and Ingredient Integrity
At the core of the menu are handmade noodles, and their quality is unmistakable. Texture is everything in a broth-based dish, and these noodles deliver structure, chew, and resilience. They hold their shape beautifully and absorb flavour without becoming soft or bloated.
Ingredients are thoughtfully sourced, prioritising quality over cost-cutting. The broths are slow-developed, layered, and balanced rather than aggressively seasoned. Nothing tastes rushed. Nothing tastes careless.
Garnishes are minimal by design. Pak choi, spring onion, and carefully chosen accompaniments add freshness and contrast without distracting from the main components.
What I Ordered
To properly experience the range of the menu, I tried:
- Braised Beef Noodle Soup
- Spicy Beef Noodle Soup
I ordered with add-ons:
- Tofu
- Bean curd
Braised Beef Noodle Soup: Deep Comfort, Perfect Balance of Flavour And A Healthy Portion!
On Chao’s recommendation, I ordered the Braised Beef Ribs Noodles in a medium size. The portion alone deserves recognition. It was generous enough to comfortably feed two people, making it exceptional value for money at £23! Small portions starting from £9.80.
From the first spoonful, the broth stood out. Deeply comforting and full-bodied, yet remarkably light on the palate, it avoided the heaviness of a synthetic or an overpowering flavour of meat/fish or coriander, that often puts me off broth-based dishes. There was a subtle sweetness woven through the richness, creating balance rather than excess! This tasted like a new broth to me. A flavourful sauce with a hint of sweetness which soaked around the beef beautifully.
The beef ribs were outstanding. Slow-braised to the point of complete tenderness, the meat had absorbed the broth fully, resulting in rich, savoury bites that melted effortlessly. Each mouthful felt cohesive rather than component-led.
The handmade noodles anchored the dish, providing texture and bite, while simple garnishes of pak choi and spring onion lifted the richness with freshness. Nothing overpowered anything else. This was a bowl built on restraint and understanding.
This dish alone is reason enough to visit One More Noodles.

Spicy Beef Noodle Soup: Heat with Precision and Depth Without Burning Your Tongue
The Spicy Beef Noodle Soup delivered warmth rather than aggression. Using Chinese spices sourced directly from China, the heat builds gradually, enhancing the broth instead of overwhelming it.
There is a clear kick, but it remains controlled and intentional. The spice encourages slower eating, drawing out layers of flavour rather than numbing the palate. It is the kind of heat that leaves you wanting another bite, not reaching for water. You may experience a slight cough or two, but the flavour is moreish – you’ll keep returning anyway!
For diners who enjoy spice but value balance, this dish strikes an excellent middle ground. I’m sure Chao can make it spicier on request!

Tofu and Bean Curd Add-Ons
The tofu and bean curd add-ons added additional texture and substance to both dishes. They absorbed the broth well and complemented the noodles without dominating the bowl.
The only personal note is that the accompanying broth leaned slightly heavy on cilantro for my taste. This is purely preference-based and did not detract meaningfully from the overall experience. As I could easily remove them from this broth and place them into my noodle soups – which is the intention anyway!

Why One More Noodles Excels in Manchester’s Food Scene
Manchester’s food culture thrives on independent operators who prioritise craft over speed. One More Noodles embodies that ethos.
What sets it apart is not novelty, but discipline. The menu is focused. The execution is consistent. The flavours are considered. This is a restaurant that understands its lane and excels within it.
Rather than trying to do everything, One More Noodles does a few things exceptionally well. That clarity is refreshing.

Manchester’s Chinatown is one of the largest in Europe and has long been a cornerstone of the city’s dining landscape. While some restaurants cater to broad appeal, others preserve regional techniques and traditional approaches. There’s many different types of restaurants in Manchester’s Chinatown for lunch, dinner, or even after midnight late food in Manchester!
One More Noodles sits comfortably within this landscape while carving out its own identity. It bridges tradition and modern execution, offering dishes that feel authentic without being inaccessible.
Its presence adds depth to Chinatown’s offering, reminding diners that some of the most exciting food experiences come from small, independently run kitchens rather than large-scale operations.
Manchester Food Culture and the Importance of Independent Restaurants
Manchester has earned its reputation as a food city not through luxury alone, but through diversity, independence, and experimentation. The city’s best spots are often owner-led, quietly excellent, and deeply rooted in personal stories.
One More Noodles represents the best of this culture. It is built on patience, skill, and belief in the product. These are the restaurants that sustain Manchester’s reputation long-term.
Supporting places like this matters. They shape the city’s food identity far more than fleeting trends ever could.
One of the only problems our local, independent venues face is being swallowed up by the algorithms, and lost in the voices of social medias, or not being on the top 50 restaurants in Manchester – even though quite a few should. We thrive when we find independent businesses to support, and it brings a buzz back into the local city when we’re exploring different dishes from all over the world.

Final Verdict:
One More Noodles is a restaurant I recommend without hesitation and in the highest terms. The food is deeply satisfying, thoughtfully executed, and genuinely memorable.
From a personal perspective, it achieved something rare: it completely shifted my relationship with broth-based dishes. That alone speaks volumes about the quality and balance of the food.
If you value flavour, craftsmanship, and independent ownership, One More Noodles deserves a firm place on your Manchester dining list.

Situated within Manchester’s Chinatown, the restaurant is perfectly placed for both city centre visitors and locals. It works equally well as a planned destination or an impromptu dinner stop before theatre, drinks, catching up with friends, lunch in Manchester or an evening out!
